From a six-table corner cafe to a candle-lit dining room — the people, produce and patience behind NoirBite.

HOW IT BEGAN

A small room, two burners and a very long list of ideas

NoirBite opened in 2014 with six tables, a second-hand espresso machine and a menu that changed whenever the market did. What we lacked in space we made up for in stubbornness — everything was made in-house, every morning.

A decade later the room is bigger and the kitchen is calmer, but the habit has not changed. We still shop first and write the menu second.

OUR PHILOSOPHY

Three things we refuse to rush

Seasonal first

We build dishes around what is good this week, not what is convenient all year. The menu moves with the calendar.

Made in-house

Bread, pasta, pickles, stocks and pastry are made here daily. It is slower, and it tastes like it.

Generous hospitality

Great cooking is only half of it. The other half is how it feels to sit down, be looked after and take your time.

A decade, in four moments

2014

The first room

Six tables, one espresso machine and a hand-written menu.

2017

The kitchen grows

A proper pass, a pastry section and our first full-time baker.

2021

Roasting our own

We start roasting coffee in-house and open for slow weekend brunch.

2025

The dining room today

Forty covers, eighteen local suppliers and a menu that still changes weekly.

HEAD CHEF

Elena Rossi

Elena trained in Rome and later in Copenhagen, where she learned to treat vegetables with the same seriousness as protein. She joined NoirBite in 2016 and has led the kitchen since 2018.

Her cooking is precise but unfussy — a short menu, strong sourcing, and sauces that take two days when they need to.

INGREDIENTS & SOURCING

We buy from people, not catalogues

We work with eighteen growers, bakers and producers within a short drive of the city. Vegetables arrive twice a week, fish is bought daily, and anything we cannot source responsibly simply does not go on the menu.

Trim is used for stock, bread becomes crumb, and our coffee grounds go back to the growers we buy herbs from. It is not a marketing programme — it is just tidy cooking.
